What each one asks you to give up

Three bikes and three prices paid in something other than money. If none of these matters to you, the decision was already made by your height.

K02 · a frame, not a disciplineYou get the only frame under 178 cm and the easiest mounting of the three. You do not get trail geometry — 710 mm of stack is a city and gravel number, and at 178 cm you are sitting at the top of its range rather than in the middle.
K01 · 178 cm is a floor, not a suggestionTrail geometry and 840 mm of stack, on the same pack. Below 178 cm the bike is wrong no matter how much you want it, and there is no small frame coming. The display is monochrome, deliberately: a colour screen glares on a night ride.
K03 · power bought with range and massTwo motors, fat tyres, magnesium wheels and about 200 kg of load. It goes through snow and sand the other two will not. It also weighs 43.4 kg and does 60–80 km, not 130, and its sensor reads cadence rather than effort — the assist feels different.
Before you order

Two answers that are the same on all three

Neither of these is a specification, which is exactly why neither is a row in the table. A row would make them look settled.

Every bike ships with a throttle.

The factory does not build a throttle-free configuration, so a bike without one cannot be supplied. If that is a problem for where you ride, tell us before you order rather than after it arrives.

All three are set up for EU road use.

250 W continuous, assistance to 25 km/h. Higher output modes exist and are not road-legal here. How a throttle and that classification interact is decided member state by member state, so we will not answer it in a table — ask a person and get it in writing.
